- 1 lb boneless, skinless chicken breasts
- 2 cups of Minute rice
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 can of water (use one of the soup cans)
- 1 envelope Lipton Onion Soup Mix
- 1 tablespoon butter
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Butter a 9×13-inch baking pan using the tablespoon of butter
- Prepare the Rice: Place the rice in the bottom of the greased casserole dish
- Mix Soups and Water: In a mixing bowl, combine both cans of soup with water. Pour some of the soup mixture over the rice and let it stand for a few minutes
- Add Chicken: Place the chicken pieces on top of the rice
- Sprinkle Soup Mix: Sprinkle the onion soup mix over the chicken
- Cover and Bake: Cover the dish tightly with foil and bake for about 90 minutes, or until the chicken is cooked through and the liquid has been absorbed into the rice
- Check for Doneness: Ensure the chicken is fully cooked by checking that the internal temperature reaches 165°F (74°C) or that the juices run clear
