Description

Amazing Forgotten Chicken is a comforting, one-dish meal that combines tender chicken breasts, creamy soup, and flavorful rice for a quick and easy dinner option.   • 1 lb boneless, skinless chicken breasts
  • 2 cups of Minute rice
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can of water (use one of the soup cans)
  • 1 envelope Lipton Onion Soup Mix
  • 1 tablespoon butter

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Butter a 9×13-inch baking pan using the tablespoon of butter
  2. Prepare the Rice: Place the rice in the bottom of the greased casserole dish
  3. Mix Soups and Water: In a mixing bowl, combine both cans of soup with water. Pour some of the soup mixture over the rice and let it stand for a few minutes
  4. Add Chicken: Place the chicken pieces on top of the rice
  5. Sprinkle Soup Mix: Sprinkle the onion soup mix over the chicken
  6. Cover and Bake: Cover the dish tightly with foil and bake for about 90 minutes, or until the chicken is cooked through and the liquid has been absorbed into the rice
  7. Check for Doneness: Ensure the chicken is fully cooked by checking that the internal temperature reaches 165°F (74°C) or that the juices run clear
  8. Serve: Remove the baking pan from the oven and serve the Amazing Forgotten Chicken hot
