Description
Cowboy Stew is a hearty, one-pot meal combining ground beef, sausage, potatoes, beans, and tomatoes for a filling, smoky stew inspired by the American Southwest. Perfect for large gatherings or family dinners.
Ingredients
– 1 lb ground beef
– 1 lb smoked sausage, sliced
– 2 large potatoes, diced
– 1 can (15 oz) pinto beans, drained
– 1 can (15 oz) kidney beans, drained
– 1 can (15 oz) diced tomatoes
– 1 can (8 oz) tomato sauce
– 1 medium onion, chopped
– 2 cloves garlic, minced
– 1 cup corn (frozen or canned)
– 4 cups beef broth
– 1-2 tsp chili powder
– 1 tsp ground cumin
– Salt and pepper to taste
Instructions
1. Brown ground beef in a large pot, add sausage, and cook until browned.
2. Add onions, garlic, and cook until soft.
3. Stir in potatoes, chili powder, cumin, salt, and pepper.
4. Add beans, tomatoes, tomato sauce, corn, and broth.
5. Bring to a boil, then simmer for 30-40 mins until potatoes are tender.
6. Serve hot with bread or tortillas.

– Optional garnishes: chopped cilantro, green onions, or shredded cheese.
