Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C) and grease a mini muffin tin.
  2. Combine Dry Ingredients: In a medium bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. Mix Wet Ingredients: In another bowl, mix the milk, melted butter, honey, and egg until well combined.
  4. Combine Wet and Dry Ingredients: Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the corn kernels.
  5. Fill the Muffin Tin: Spoon the batter into the prepared mini muffin tin, filling each cup about 3/4 full.
